Apple Cake

Hi,

I would like to post a recipe for a apple cake from my dear friend Anna last term here in Iceland. Please notice that all measurements are approximately correct, so you might have to use trail and error… :-D

  • 400g flour
  • 150g butter
  • 200g sugar (brown icelandic sugar “Púður…” if possible)
  • 3 eggs
  • 1 teaspoon baking soda
  • 1-2 teaspoons vanilla sugar (or some drops vanilla essence)
  • 1-2 teaspoons cinnamon
  • 80 ml milk (enough to make the dough nice and creamy)

Mix all together and put it into a greased cake mold.

Spread

  • 3-4 apples
  • cinnamon
  • sugar
  • butter
  • 100g almonds

Mix all togehter and put it on top of the dough.

Topping

  • 1 part butter
  • 2 part sugar
  • 4 part flour

Melt the butter in the pan, add sugar and flour and mix it until you have streusel. Put the streusel on top. All together bake the cake in the headed oven at 180-200°C for 45-60 minutes.

Sauerkrautauflauf

For the nice dish you just need the following:

  • 500g of Pasta - best are Penne
  • 300g of Sauerkraut - Sour cabbage
  • 100g of cheese which ever you like. Emmentaler, Gouda or such thing
  • 1 Onion
  • Garlic (as you like)
  • Salt and Pepper
  • Caraway (for a better digestion J)
  • 1 Soup cube or the equal in vegetable stock
  • cream

First boil the pasta and while doing so, chop the garlic and onion and fry it in a pan. When they are glassy, add the sour cabbage and heat it. Season it with salt, pepper, caraway and add the soup cube. Let it cool down a bit.

Take a casserole and layer pasta - sour cabbage - cheese until you finish everything. Add the liquid cream (milk is fine as well, but please not the 0,1% stuff). Put it in the already heated oven at 185°C for around 30min… Until the cheese is nice melted and getting golden.

Serve as wish and enjoy!

Celeriac-soup

Hi, a few days ago I had the impression I would have to try something new with celery, so here is a new recipe for you to try out.

  • 200g celeriac
  • 50g rice
  • 1l water
  • 50-100g shrimp
  • 50 ml cream
  • juice of half a lemon
  • fresh or dried parsely
  • garlic
  • vegetable stock

First of all, the easiest is to boil the rice and small cut celery in 1l water until it is done. Then add 1ts of vegetable stock and the shirmp and continue boiling it on medium heat for additional 5 min. Later add the spices and cream and simmer it for a while. Add a bit starch if you would like to have it more creamy. Let the soup cool down a bit and add then the lemon juice (otherwise you will loos all the vitamin C).

Gebrannte Mandeln

Ok, wenn mal wieder eine stressige Zeit ansteht, soll man ja ein wenig Nüsse knabbern. Ich hab demnach auf dem Podcast der “Sendung mit der Maus” mal das Rezept für gebrannte Mandeln gefunden, dass ich gerne mit euch teilen will.

Zutaten:
1 Teil Mandeln (oder andere Nüsse)
1 Teil Zucker
etwas Wasser

Zubereitung:
die Mandeln mit dem Wasser (ca. 1/10 Teil) in einem Topf mit der Hälfte des Zuckers zum Kochen bringen. Die Nüsse ständig rühren, da sie sonst aneinander haften. Sobald das Wasser verkocht ist, die Mandeln leicht weiter rösten. Dannach die Mandeln aus dem Topf entfernen, dem restlichen Zucker im gleichen Topf schmelzen und  Karamell herstellen. Darin die Mandeln wenden und vom Ofen nehmen, flach auf einem Brett ausbreiten und erkalten lassen. Dannach sind die Mandeln nur noch zu vernaschen…

Bei mir bleiben ja leider nicht sehr viele übrig, da ich entweder alle verteile oder sofort selbst verputz… ;-)
